well lads i just thought i would put this up, dont know if ye all eat what you catch but some of these recipes are brilliant to introduce people into eating rabbits... feel free to add recipes to this
my personal favourite is this its my girlfriends own paella recipe
ingredients
1 chorizo sausage sliced
1 pack of chopped pancetta or unsmoked streaky bacon cut up
2 rabbits cut off the bone and cubed
1 onion chopped
1 garlic clove
paella rice 1/2 packet for 3/4 people
1 lemon zest and juice
1/2 glass white wine
handful fresh thyme leaves not stalks
1/2 teaspoon of paprika
1/2 teaspoon of dried chill flakes
1/2 red pepper
2 pints of chicken stock(1cube to 2pints water)
pinch of saffron in with the stock
handful of prawns/mussels or a mix of both
handful of frozen peas
4 large tomatoes deseeded and chopped up
1knob of butter and handful of parsley(garnish)
use a deep pot with a lid, soup pot or something of that size
method
1) fry chorizo and pancetta in olive oil until pancetta is nearly crispy
2)take out of the pot and put in a bowl then fry the rabbit until nearly cooked
3)take the rabbit out and put in the bowl with the chorizo and pancetta
4)fry chopped onion and garlic in the olive oil until soft,turn heat up
5)add paella rice and stir quickly until rice goes slightly clear at edges
6)squeeze the juice of the lemon into pot and add the 1/2 glass of wine
7)put in thyme leaves,1/2teaspoon of paprika,1/2teaspoon of the dried chilli flakes
8)pour in the stock with saffron,turn down to a simmer and put the lid on
9)after 5mins put in the rabbit chorizo and pancetta
10)after 10mins put in prawns and put the lid on for 2/3mins
11) add the frozen peas and the fresh chopped tomatoes
12)stir in the butter and the lemon zest chopped parsley,put the lid on and take of the heat leave for a min and serve
